Chandon Late Disgorged blends Chardonnay, Pinot Noir and Pinot Meunier from cool climate sites in Australia's southern wine regions, including the Yarra Valley, Strathbogie Ranges and Whitlands.
The grapes are picked during the cooler parts of the day to ensure minimal colour is extracted from the fruit at pressing. Parcels from each site are fermented separately to preserve their unique characteristics.
The wine is made using the time honoured méthode traditionnelle – the traditional French method of making sparkling wine. There are two fermentations: one in barrel and one in bottle to create fine, tiny bubbles.
After the second fermentation in bottle, the wine spends 10 years ageing on yeast lees. Once the lees are removed, it rests in bottle for six months further before its release.
Light yellow, Chandon Late Disgorged has layers of complexity from its time on lees, with intense savoury characters, creamy texture and a bright, crisp acidity. Despite its age, it retains a youthful vibrancy.
It is the pinnacle of Chandon's sparkling winemaking. Drink within two years of release.
